We usually cook mostly with ripe tomatoes. It does, however, appear to be cooked in very few places with green tomatoes. Especially in rural areas we see green tomatoes being canned. It is also very tasty. Although ripe red tomatoes are not as nutritious, green tomatoes have many nutritional benefits. The inclusion of these green tomatoes in non-vegetarian dishes in green salads is also found in Western countries. These can provide you with plenty of vitamins and minerals. Vitamin C

Ripe, red tomatoes are rich in vitamin C. Green tomatoes, however, do not provide as much vitamin C as the body needs. One cup of green tomatoes contains up to 42 milligrams of vitamin C. One cup of green tomatoes contains 2 grams of dietary fiber. Although fiber is found in most fruits, vegetables and whole grains, the fiber in green tomatoes does not fully mature so it plays a more effective role. 1-cup green tomatoes also contain many additional nutrients, including 23 milligrams of calcium and 367 milligrams of potassium. Also protein, magnesium, phosphorus and vitamin K can be obtained.
